White spring truffle is known for its strong flavor with mild notes of garlic. The scent is intense and characterized by a garlic aroma.

The inner color ranges from sandy to light brown. The season typically runs from January to April in Europe.
Characteristics
Type: White spring truffle
Also known as: Bianchetto
Season: January to April
Flavor: Strong with mild notes of garlic
Scent: Intense garlic aroma
Inner color: Sandy to light brown
Serving
Truffles should be served at room temperature to achieve the best aroma and flavor. Therefore, take them out of the refrigerator well in advance of use.
The aroma is best released when the truffle is grated or shaved as a finishing touch over a warm or hot dish. The heat helps activate the truffle’s aroma.
Storage and shelf life
Shelf life is approx. 1–2 weeks with proper storage. Wrap the truffles individually in kitchen paper and store them in an airtight container in the refrigerator. The kitchen paper should be changed about every other day.
The truffle may develop a white mold-like layer on the outside. This is called mycelium and is natural. It can be removed gently with a brush or by quickly rinsing the truffle under cold water and drying it immediately afterwards.
Note
In Italy, white spring truffle is called Bianchetto, which means “the little white one”.
Truffles are a natural product, and the weight may vary. We always select truffles that are as close as possible to the ordered weight.

Truffles may lose weight during transport as they release moisture. Therefore, they are packed in moisture-absorbing paper, and we always pack a few grams over the ordered weight to compensate for any potential weight loss.
