Beluga caviar comes from the sturgeon species Huso huso and is known for its large eggs and soft texture.

The eggs typically measure 2.9–3.3 mm and have a deep dark grey color. The larger roe size provides a pronounced mouthfeel and a creamier experience compared to smaller types of caviar.
