Umeshu is a Japanese liqueur based on ume plums, where sweetness, acidity, and aromatic depth are in balance. It is produced by steeping fresh ume plums in alcoholโtypically shochuโtogether with sugar over an extended period. The result is a golden liqueur with a full-bodied and rounded flavor profile.
During extraction, the ume plums develop a distinctive aroma, where fruitiness is combined with light almond notes from the plum pit. This creates a complex yet approachable profile that works both for neat serving and as an ingredient.
