Pectin E440i is a gelling agent.
Used to stabilize ice creams, jams and jellies, as well as mixtures with low sugar content.
Method
To avoid lumps:
Mix pectin with other dry ingredients, e.g. 3 parts pectin to 5 parts sugar.
Now pour into the mixture and dissolve with vigorous stirring and heating. Heat to 80/85°C; everything should be dissolved at this point.
Dosage: 0.5 to 1.5%, depending on the desired texture.
