OTORO

Especially good for:
Raw: Sliced.

The cuts may vary from piece to piece, and natural differences may occur in the structure of the membranes and the spacing between them. This is part of the character of the raw material and should be taken into account in its use.

Our producer is a Portuguese-Japanese company specializing in catching and exporting bluefin tuna.
The company uses Japanese fishing gear and advanced technology to ensure high quality and fresh products. After the catch, the tuna are weighed, packed in styrofoam boxes with ice, and transported to the airport in the company’s own refrigerated trucks to preserve freshness.
The company operates a set net fishery called “Armação de Pesca” about 2.5 nautical miles from the Algarve coast at depths between 20 and 60 meters.
The set net is designed to take advantage of fish’s natural behavior; when they encounter an obstacle, they typically move away from the coast toward the open sea.
The company uses a modern Japanese method for set net fishing. This involves a unique combination of the set net’s shape and specially designed work boats. Most of the fishing gear, including nets and boats, is imported from Japan.
Guide to thawing tuna
Wash the tuna in 40-degree warm water to remove impurities from the cutting
Make a brine with 2 liters of cold water and 100 grams of gourmet salt
Place the tuna in the brine for 15 min.
Pat the tuna dry and wrap in food-approved fish cloth
Wrap film around the paper and let the piece thaw at refrigerator temperature for 3 hours.
Important when ordering multiple pieces (variable weight)
When you order multiple pieces of a product with a specified weight range, the order is packed according to the total ordered weight – not necessarily in equal pieces.
Example: If you order 2 pcs. of 500 g (approx. 1000 g in total), you may receive, for example, one piece of 1000 g, as long as the total weight corresponds to what was ordered.

If you specifically want the pieces to fall within the stated range per piece (e.g., 2 pieces of 500 g each), please write this clearly in the notes field at checkout. Then we will try to accommodate the request as precisely as possible
