SUJI is a structured and characterful cut of bluefin tuna, particularly well suited both raw and lightly cooked.

Especially good for:
  • Raw: Scraped for tartare
  • Cooked: Briefly grilled over high heat
The cuts may vary from piece to piece. Natural differences in sinew and structure are part of the character of the raw material and should be taken into account in its use.
The producer is a Portuguese-Japanese company specializing in the catch and export of bluefin tuna. The fishery is carried out as traditional set-net fishing – Armação de Pesca – approx. 2.5 nautical miles from the Algarve coast at depths between 20 and 60 meters. The method combines Portuguese tradition with modern Japanese technology, including Japanese nets and specially designed boats.
After the catch, the tuna are weighed, packed in styrofoam boxes with ice, and transported in the company’s own refrigerated trucks directly to the airport to ensure maximum freshness.
Guide to thawing tuna
  • Rinse the tuna in 40°C warm water to remove impurities from the cutting
  • Dissolve 100 g gourmet salt in 2 liters of cold water
  • Place the tuna in the brine for 15 minutes
  • Pat dry, wrap in approved fish cloth
  • Wrap with film and thaw at refrigerator temperature for approx. 3 hours
Important when ordering multiple pieces (variable weight) 
When you order multiple pieces of a product with a stated weight range, the order is packed according to the total ordered weight – not necessarily in identical pieces. 
Example: If you order 2 pcs. of 500 g (approx. 1000 g total), you may receive, for example, one piece of 1000 g, as long as the total weight corresponds to what was ordered. 
If you specifically want the pieces to fall within the stated range per piece (e.g., 2 pcs. of 500 g each), please write this clearly in the notes field at checkout. Then we will try to accommodate the request as precisely as possible

If you place your order before 12:00 noon, Monday–Thursday, we will dispatch your order the same day.

  • You can expect a delivery time of 1–2 days.

Delivery of chilled goods:

All chilled goods are shipped securely in insulated boxes with plenty of ice packs, so your package stays cold during transport. We guarantee that the package remains cold for up to 12 hours after arrival at the selected parcel shop. Please make sure to collect your package promptly. If the package is collected later than 12 hours after arrival, the right to make a complaint is void.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
