Batak pepper – wild-grown from Sumatra

Batak pepper, also known as Zanthoxylum acanthopodium, grows wild in the northern part of the island of Sumatra in Indonesia. Here it is harvested by the Batak people, also called the Toba people, who number around 6 million.
The pepper is related in family and character to Sichuan pepper, but differs with its distinct citrus profile. The aroma holds clear notes of mandarin and fresh orange leaves, while the flavor is smooth with a tangy edge that gives dishes a pronounced freshness.
Characteristics
  • Origin: Sumatra, Indonesia
  • Intensity: 4 out of 7
  • Aroma: Citrus, mandarin, orange leaves
  • Flavor: Smooth, slightly tangy
Use

Batak pepper is well suited for marinades, dressings, and dishes where a fresh and tangy pepper character is desired. It elevates fish, shellfish, poultry, and vegetable dishes and can be used to advantage as a more citrus-forward alternative to Sichuan pepper.
