Made from the loin and seasoned with sea salt, paprika, garlic, and sugar.
It is then aged for a minimum of 8 months.
The texture is silky smooth, with extremely beautiful fat marbling from the Iberico meat, and it finishes with notes of nuts, Iberico fat, and spices.
JOSELITO is considered the BEST producer of Iberico in the entire world; each pig has an area equivalent to 3 football fields to roam in. The pigs are not in contact with humans before they are slaughtered at 2 years of age; until then they live a wild and free life, where they eat grass, herbs, and of course acorns from the more than 100-year-old oak trees. This diet helps make the meat exceptional; the nourishing amino acids in the grass give the fat a completely clear white color, which is one of the biggest signs of quality in pork.

When the pig is to be slaughtered, it is gently herded away from the herd so as not to stress the other animals. The slaughter takes place in isolation and humanely, both to achieve the best quality in the meat, and also so the herd is not affected.
When the meat is aged, it happens in the ancient cellars, where the University of Barcelona has mapped 42 fungi, which are the very essence behind JOSELITO’s success.

We guarantee that the package remains cold for up to 12 hours after arrival at the selected parcel shop. Please make sure to collect your package promptly. If the package is collected later than 12 hours after arrival, the right to make a complaint is void.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
