White winter truffle, Tuber magnatum Pico, is one of the most aromatic truffle varieties. It has an intense aroma and flavor and is primarily used raw as a finishing touch on completed dishes.

The interior color is light sandy with white marbling. The season typically runs from October to December.

Serving
White winter truffle should be served at room temperature to achieve the best aroma and flavor. Therefore, take it out of the refrigerator well in advance of use.
The truffle should not be cooked. It is used raw and shaved or grated as a finishing touch over warm or hot dishes, where the heat helps release the aroma.
Note
White winter truffle is not a cultivated truffle variety and is only found in the wild. It is typically hunted with specially trained dogs.
Truffles are a natural product, and the weight may vary. We always select truffles that are as close as possible to the ordered weight.
Storage and shelf life
Shelf life is approx. 1–2 weeks with proper storage. Wrap the truffles individually in kitchen paper and store them in an airtight container in the refrigerator. The kitchen paper should be changed approx. every other day.
The truffle may develop a white mold-like layer on the outside. This is called mycelium and is natural. It can be gently removed with a brush or by quickly rinsing the truffle under cold water and drying it immediately afterward.
Weight and transport
Truffles can lose weight during transport as they release moisture. Therefore, they are packed in moisture-absorbing paper so that the moisture does not form condensation.

We calibrate our scales daily and always pack a few grams over the ordered weight to compensate for any potential weight loss.

Delivery of chilled goods:

All chilled goods are shipped securely in insulated boxes with plenty of ice packs, so your package stays cold during transport. We guarantee that the package remains cold for up to 12 hours after arrival at the selected parcel shop. Please make sure to collect your package promptly. If the package is collected later than 12 hours after arrival, the right to make a complaint is void.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
