The white winter truffle – Tuber Magnatum Pico – is known for its unique and incredible taste and aroma, which is hard to compare to anything else.

Its interior color is light sandy with white marbling
The season runs from October to December.

SERVING

Truffles should be served tempered to achieve optimal aroma and flavor. They should therefore not be used directly from the refrigerator. For best results, take the truffles out well in advance so they reach room temperature before use.
Maximum aroma and flavor are released when the truffle is grated or shaved as a finishing touch over a lukewarm or hot dish; here the heat activates the aromas.

  • As the only truffle species, it has never been possible to cultivate it. Therefore it is still found only in the wild. They are hunted in secrecy by experts, most often at night.
  • The most well-known areas where it lives are in Emilia-Romagna, Tuscany, Umbria, Abruzzo, Alba and Marche in Italy, and in Croatia, Slovenia, Serbia, Albania, Hungary and Romania.
  • Must be served raw, either sliced or grated.
  • Normally sold for between 30,000 and 90,000 Danish kroner per kilo.
  • Truffles are a natural product, and the weight may vary. We always choose truffles that are as close as possible to the number of grams you have ordered.
For over 100 years, truffles have been a very popular edible mushroom.

In the past, pigs were used to sniff them out underground. However, pigs had trouble controlling their excitement, so when they found the truffles they might eat them. There are also stories of truffle hunters who have lost fingers to the pigs when they tried to get hold of the truffles before the pig did.
Today, special trained dogs are therefore used to find the truffles.

STORAGE AND SHELF LIFE

Our truffles have a shelf life of 1–2 weeks provided they are stored correctly.
The correct method is to wrap them individually in kitchen paper and place them in an airtight container that is kept in the refrigerator. The kitchen paper around the truffle should be changed approximately every other day.
The truffle may develop a white, mold-like layer on the outside; this is natural for the truffle as it is its way of reproducing. The white mold-like layer is called mycelium and is easily removed by brushing gently or by rinsing the truffle very quickly under cold running water, and drying it immediately afterwards.
WEIGHT AND TRANSPORT

The truffles may lose weight during transport.
This is due to the moisture that the truffles release during both transport and when storing the truffles.
To prevent the moisture from forming condensation, which would result in the truffles spoiling, we pack the truffles in moisture-absorbing paper, and it is into this paper that the moisture will migrate; therefore you may find that the truffles weigh a few grams less than you ordered.

We calibrate our scales every day, and always pack a few grams over the ordered amount to compensate for any potential weight loss.

We guarantee that the package remains cold for up to 12 hours after arrival at the selected parcel shop. Please make sure to collect your package promptly. If the package is collected later than 12 hours after arrival, the right to make a complaint is void.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
