In stock

Black winter truffle, also known as Périgord truffle, has a rich and deep flavor with notes of chocolate, cognac, prunes, and musk.

The interior color ranges from brownish to black with distinct white marbling. The season typically runs from November to March in Europe and from June to August in Australia and South America.
Characteristics
Type: Black winter truffle
Also known as: Périgord truffle
Season Europe: November to March
Season Australia and South America: June to August
Flavor: Deep and rich with notes of chocolate, cognac, prunes, and musk
Interior color: Brownish to black with white marbling
Serving
Truffles should be served at room temperature to achieve the best aroma and flavor. Therefore, take them out of the refrigerator well in advance of use.
Black winter truffle can be grated or shaved as a finishing touch over warm or hot dishes. It differs from many other truffle types in that it can also withstand cooking and is often used in sauces, purées, and soups.
Storage and shelf life
Shelf life is approx. 1–2 weeks with proper storage. Wrap the truffles individually in kitchen paper and store them in an airtight container in the refrigerator. The kitchen paper should be changed about every other day.
The truffle may develop a white, mold-like layer on the outside. This is called mycelium and is natural. It can be gently removed with a brush or by quickly rinsing the truffle under cold water and drying it immediately afterwards.
Note
Black winter truffle is now cultivated in several places, but cultivation requires inoculating the roots of, among others, oak or hazel and a long maturation time.
Truffles are a natural product, and the weight may vary. We always select truffles that are as close as possible to the ordered weight.

Truffles may lose weight during transport as they release moisture. Therefore, they are packed in moisture-absorbing paper, and we always pack a few grams over the ordered weight to compensate for any potential weight loss.
