Honey Truffle

From 32,66

From 32,66

Honey truffle, Mattirolomyces terfezioides, is an underground fungus with a sweetish taste and notes of honey and dried apricot. The aroma has a mild mushroom character as well as notes of licorice and honey.

The interior color is sand-colored with white marbling. The season varies, but primarily runs from August to October.
Characteristics
Type: Honey truffle
Latin name: Mattirolomyces terfezioides
Season: Primarily August to October
Taste: Sweetish with notes of honey and dried apricot
Aroma: Mild mushroom, licorice and honey
Interior color: Sand-colored with white marbling
Serving
Truffles should be served at room temperature to achieve the best aroma and taste. Therefore, take them out of the fridge well in advance of use.
The aroma is best released when the truffle is grated or shaved as a finishing touch over a lukewarm or hot dish. The heat helps activate the truffle’s aroma.
Storage and shelf life
Shelf life is approx. 1-2 weeks with proper storage. Wrap the truffles individually in kitchen paper and store them in an airtight container in the fridge. The kitchen paper should be changed about every other day.
The truffle may develop a white, mold-like layer on the outside. This is called mycelium and is natural. It can be gently removed with a brush or by quickly rinsing the truffle under cold water and drying it immediately afterwards.
Note
Honey truffle is not part of the Tuber family, but is referred to as a truffle because it grows underground.
It grows wild under black locust trees, Robinia pseudoacacia, along the Danube in Hungary.
Truffles are a natural product, and the weight may vary. We always select truffles that are as close as possible to the ordered weight.

Truffles may lose weight during transport, as they release moisture. Therefore, they are packed in moisture-absorbing paper, and we always pack a few grams over the ordered weight to compensate for any potential weight loss.
