Honey truffle

From 32,89

From 32,89
Honey truffle – Mattirolomyces Terfezioides – is known for its sweet taste with notes of honey and dried apricot. The aroma has a faint mushroom character, licorice, and honey.

Its inner color is sand-colored with white marbling
The season varies, but primarily runs from August to October.

SERVING

Truffles should be served at room temperature to achieve optimal aroma and flavor. They should therefore not be used straight from the refrigerator. For best results, take the truffles out well in advance so they reach room temperature before use.

Maximum aroma and flavor are released when the truffle is grated or shaved as a finishing touch over a warm or hot dish; the heat activates the aromas.

FUN FACTS
  • In fact, it isn’t a truffle at all, as it is not a member of the Tuber family. However, it is an underground fungus and is therefore called a truffle.
  • It only grows wild under black locust trees (Robinia Pseudoacacia) along the Danube River in Hungary.
  • In the past, people crushed the truffle and used it as a sweetener in baked goods. Today, however, it has become too expensive for this.
  • Truffles are a natural product, and the weight may vary. We always choose truffles that are as close as possible to the number of grams you have ordered.

STORAGE AND SHELF LIFE

Our truffles have a shelf life of 1–2 weeks provided they are stored correctly.
The correct way is to wrap them individually in paper towel and place them in an airtight container in the refrigerator. The paper towel should be changed around the truffle approximately every other day.
The truffle may develop a white, mold-like layer on the outside; this is natural for the truffle as it is its way of reproducing. The white, mold-like layer is called mycelium and is easily removed by gently brushing, or by rinsing the truffle very quickly under cold running water and drying it immediately afterwards.
WEIGHT AND TRANSPORT

The truffles may lose weight during transport.
This is due to the moisture that the truffles release during transport and also when you store the truffles.
To prevent the moisture from forming condensation, which would result in the truffles going bad, we pack the truffles in moisture-absorbing paper, and it is in this paper that the moisture will be drawn. Therefore, you may find that the truffles weigh a few grams less than you ordered.

We calibrate our scales every day and always pack a few grams over the ordered amount to compensate for any possible weight loss.
