Bora-Bora vanilla – Long-matured vanilla of exceptional quality

Vanilla is today the world’s second most expensive spice, only surpassed by saffron. Over the past seven years, the market price of vanilla has increased tenfold and is approaching the value of silver. This development reflects not only global demand, but also the complexity of cultivation.

Vanilla originates from Vanilla planifolia, an orchid plant that requires both patience and precision. The first flowering occurs no earlier than three years after planting, and after that it takes eight months before the pods are mature and ready for harvest.

The story of manual pollination

Vanilla was first cultivated outside Mexico on the French island of La Réunion (formerly Île Bourbon) at the request of King Louis XIV. The project failed, however, as the plant did not bear fruit without the Mexican Melipona bee. The solution came in 1850, when Edmond Albius, a young slave, discovered how the flower could be pollinated manually. He was freed for his discovery and took the name Albius, with reference to the white flowers of the vanilla (alba = white).

Tahiti vanilla from Bora-Bora – a unique approach

In French Polynesia, on the northwestern part of the island of Tahaa, you find the Bora-Bora plantation – an isolated and largely untouched place where the vanilla orchid naturally climbs along the mountain slopes. Here, the exposure to sunlight is controlled by the surroundings, creating optimal growing conditions without human intervention.

Unlike conventional vanilla production, where the pods are harvested unripe and fermented using heat, the Bora-Bora producer allows the pods to mature naturally on the plant. This means that each pod develops its full aroma before being harvested – a method used only here.

Quality and flavor profile

Bora-Bora vanilla pods typically measure 13–30 cm and have a concentration of vanilla seeds that is up to 10 times higher than classic Bourbon vanilla. The flavor is complex with notes of caramel, chocolate, prunes and licorice – characteristics that make it ideal for both the dessert kitchen and experimental gastronomy.

In contrast to mass production – with respect for nature

Most vanilla producers in French Polynesia supply unripe pods to large operators, where everything is mixed and standardized. Since 1997, the Bora-Bora plantation has chosen a different path: minimal intervention, natural maturation and small batches with a focus on quality over volume.
