TRUEfoods โ stock as the chef would make it
TRUEfoods is a British producer of stock, broths, jus and sauces based in North Yorkshire, Northern England. For nearly 20 years, they have specialised in refining the process behind classic stock, with a focus on precision, consistency and flavour.
The production is based on traditional kitchen techniques, where bones, carcass and mirepoix are slowly simmered to build depth, structure and purity in flavour. Everything is produced using the same approach as in a professional kitchen โ in a scalable form, made without compromise and strict controls.
Founder Mitch Mitchell
Founder Mitch Mitchell is himself a chef with many years of experience at top level experience in quality restaurants, a royal household and food manufacturing.
The raw materials are fresh and primarily locally sourced, ensuring consistent quality and full control over the final product. The production is without artificial additives or over handling.
TRUEfoods functions in practice as an extension of the chefโs arm. The stocks can be used directly in service or as a base for further development โ without compromising on craftsmanship.

Sustainability and raw materials
The company uses raw materials with a focus on quality and origin, including bones from animals with higher animal welfare, vegetables from the United Kingdom and spring water from a local source direct to the site. The production is supported, among other things, by solar energy, and the packaging made from 70% post-consumer recyclable content and 30% virgin content which is widely recyclable.


Roux Scholarship
TRUEfoods supports The Roux Scholarship, the UKs most prestigious young chef competition which provides lifelong support and mentorship for young chefs supporting to further develop their career, and provides access to some of the most respected food establishment around the world. The competition was established over forty years ago, and has remained the competition for those who are serious about their culinary career. At the final six young chefs are put through their paces; scrutinised by esteemed chefs before appointing a yearly winner. Several chefs who have entered The Scholarship have gone on to be awarded Michelin Stars. The winner truly becomes a lifelong member of The Scholarship family.
Bocuse dโOr
TRUEfoods are proud sponsors of the Bocuse dโOr UK team. The equivalent of the Olympics for culinary professionals. Bocuse dโOr platform is an opportunity to showcase precision of skill and culinary excellence and compete with others from around the globe.

TRUEfoods is today widely used in professional kitchens in the United Kingdom, where the demands for quality and consistency are high.
In 2019 Mitch joined forces with friend, and Americas most decorated Chef Thomas Keller and opened The Proper Stock & Sauce Company in the USA, producing from Portland OR and now servicing some of the most respected kitchens on the other side of the pond.
