Family Farms – Organic Greek olives produced using traditional methods
Family Farms is a collaboration between four organic olive producers in Greece: Astarti Co., Velouitinos, Olea Tree and GreenGrocer. What they all have in common is a focus on sustainability, organic farming and respect for the natural development of the raw material.
Greek tradition – without additives
Family Farms produces olives using the traditional Greek method, often referred to as “natural olives” or “Greek style”. In contrast to industrially produced olives, where ascorbic acid or citric acid is often added to reduce bitterness and adjust the acidity balance, Family Farms uses no additives in the production.
The acidity level in the olives is instead controlled by harvesting at the right time, depending on the olive variety and the desired flavor profile. This method requires precision and experience, but results in a more honest and authentic product – with clear character and natural balance.

Slow maturation creates deep flavor
Olives from Family Farms undergo a slow fermentation process in either brine or through dry salting. The process can last up to eight months and is essential for removing the natural bitterness of the olives while developing a complex flavor profile.
