Dashi is a basic ingredient in Japanese cuisine and a type of Japanese broth. It is made by boiling kombu (dried seaweed) and bonito flakes (dried, flaked tuna) in water.

It has a subtle flavor that is rich in umami. The umami flavor in dashi is especially important in Japanese cuisine, where it is used as a base for soups, sauces, and marinades.
Dashi is an important ingredient in many Japanese dishes, including miso soup, ramen, udon noodle soup, and tempura dipping sauces. It is also a versatile ingredient that can be used in a wide range of other cuisines and dishes where you want to add umami flavor to the dishes.
The recommended mixing ratio is 1/17.
