Discontinued – Fondust, Marine Blue 4g

In stock

FONDUST® from ROXY & RICH is the only water-soluble colour that can be used directly in food.

FONDUST® is a micro-encapsulated food colouring specially designed for colouring food with a very low water content.
It can be used to colour fondant, sugar (before or after baking), almond paste, icing, buttercream, macarons, jelly, candy—actually everything except pure chocolate.
Approx. 3 g is needed per 1 kg, for example marzipan or fondant.

GOOD ADVICE
•     When working with fondust, make sure the colour never gets outside your work area. Place a few sheets of paper towel under your area to control any stray powder. Use a piece of parchment paper as a base so you can easily and quickly return any spilled powder to the container.
•     Wear gloves.
•     Fondust is very easy to work with, as it almost instantly disappears into the mixture. Simply knead the mixture gently for a moment, and soon you will see specks of colour here and there; after that, a marble pattern will appear in the mixture. After a few minutes, the colour will reach full saturation in the mixture, even very intense colours such as red, purple and black.
•     Simply add 1–2 drops of water to your royal icing, meringue or buttercream. This will fully activate your fondust so the mixture becomes completely saturated. This will not change the texture of the mixture.
•     Fondust should not be used to paint on fondant or cakes. Its hyper-pigments must be pre-activated in a mixture to avoid colouring of teeth and mouth.
Method
FONDANT
•     Place your fondant in a bowl and add the desired amount of fondust (use max. approx. 3 grams per 1 kg).
•     Knead gently until all fondust is mixed into the fondant. Then knead for approx. 2–3 min.
•     For a darker shade, such as an intense red or intense black, more fondust powder is needed than for the other colours.
ROYAL ICING / GLAZE
•     Use approx. 3–4 g fondust to colour 1 kg royal icing.
•     Mix well and let the mixture rest for 5–10 min. for the colour to develop.
•     Mix once more and it is ready to use.
BUTTERCREAM
•     Add fondust little by little to your buttercream to achieve the desired colour intensity.
•     Let the mixture rest for 5–10 min. for the colour to develop.
•     Mix once more and it is ready to use.
