Wasabi – Wasabia Japonica – is a stem that grows underground. 
The flavor is fresh and green with a gentle touch of heat that quickly fades again. This is important so it doesn’t take focus away from the delicate fish flavor in sushi.
Use the grated wasabi with sushi or in sauces, sorbets, dressings, etc.
Keep the bag open and rinse the wasabi every 1–2 days in cold water. This way it keeps for the longest time.

Our Japanese wasabi comes only from farms in Shizuoka Prefecture, especially the Amagi area, which is known for high-quality wasabi.
Wasabi from this area is grown on steep terraces. The crystal-clear spring water flows down from the mountains, nourishing the wasabi terraces. The water contains nutrients, minerals, and dissolved oxygen, which are crucial for the wasabi plants to thrive. Trees and the steep hillsides provide natural shade from the summer sun.
When the Isewan Typhoon in 1959 flooded Amagi, it was so devastating that all the wasabi plants were washed away. Mazuma wasabi from Wakayama was replanted, and much of the wasabi grown in the area now comes from this variety.
The experts Yoshiharu-san and his father, Takahashi-san, have over 50 years of experience purchasing the best wasabi from Japan and supplying it to the finest restaurants in Tokyo. Most growers of the best wasabi in Japan are small family businesses; this, combined with wasabi’s long production cycle of at least 18 months, means that Yoshiharu-san sources our wasabi from different growers throughout the year. This ensures a continuous supply of the highest-quality wasabi.

Delivery of chilled goods:

All chilled goods are shipped securely in insulated boxes with plenty of ice packs, so your package stays cold during transport. We guarantee that the package remains cold for up to 12 hours after arrival at the selected parcel shop. Please make sure to collect your package promptly. If the package is collected later than 12 hours after arrival, the right to make a complaint is void.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
