Löjrom is fish roe that comes from the vendace.
Finnish löjrom is slightly less intense than Kalix löjrom, but apart from this the two products are very much 1:1.
The taste is extremely clean and refined and is rounded off by a fine minerality.
Finnish löjrom is fished only 20 km from the area in the Gulf of Bothnia where Kalix is fished.
The fish
Vendace (Coregonus albula) is a small salmonid fish. The fish rarely grows longer than 20 centimeters in the cold waters of the Gulf of Bothnia.
The vendace feeds on plankton, crustaceans, insect larvae and minerals that flow into the area from the large rivers.
A female vendace weighs around 20–30 g and its roe content is around 3–5 g. The size of löjrom varies during the fishing season from 0.8 mm in the first week and up to 1.3 mm in the 5th and final week of the fishery.
Shelf life after thawing is 5 days in the refrigerator.
