Old Tom Gin is a classic gin style with a slight sweetness and an aromatic spicy profile. The style was widespread in the 18th and 19th centuries and sits in terms of flavour between a dry London Dry Gin and a more rounded, sweeter gin.
The gin is distilled in a pot still with juniper, liquorice root, coriander seeds, bitter orange peel, angelica root and calamus root. The distillate is then blended with double-distilled malt spirit, which provides a rounder structure.
