Piment d’Espelette – AOP

Piment d’Espelette is one of the most distinctive spices from the Basque Country. It has an intense aroma of tomato, hay, and pepper, and the taste is spicy, warm, and fruity with a pleasant heat level of 4/10 on the Scoville scale.
The chili is harvested from August to October, first dried in ovens where they are turned every six hours, and then hung outside for further drying. Finally, they are ground into the fine powder that characterizes Piment d’Espelette.
Origin and quality
The name comes from the town of Espelette at the foot of the Basque Country’s mountains. Although the chili pepper first came to the area with Christopher Columbus in the 16th century, it has today become one of the region’s best-known trademarks.
The product is AOP-protected, which means that strict requirements are set for geographical origin and quality.
Use
  • As a substitute for black pepper in many dishes
  • For seasoning meat, fish, and vegetables
  • In sauces, marinades, and traditional Basque dishes
