Red Szechuan Pepper – Maison Noire · Chef’s Selection

Red Szechuan pepper (Zanthoxylum piperitum) originates from the Szechuan region of China and is known for its distinctive aroma and characteristic, tingling heat. It differs clearly from classic black pepper with its citrus-driven profile and lingering mouthfeel.
The fragrance holds clear notes of lime and kumquat. The taste is intense with tart undertones and a hint of cherry, delivering a complex and long finish. The reddish-brown berries open when ripe and reveal small black seeds.
Characteristics
  • Brand: Maison Noire – Chef’s Selection
  • Botanical name: Zanthoxylum piperitum
  • Origin: Szechuan, China
  • Intensity: 7/7

Historical perspective

Red Szechuan pepper was introduced to Europe in the 13th century and quickly gained popularity in Venice. After a period of reduced use, the spice saw a resurgence in the 19th century and is today a key ingredient in both Asian and modern gourmet cuisine.
