Cognac – Barrel-aged maple syrup in used cognac barrels. Here, cognac notes are sensed immediately. It’s almost like smelling an XO. This syrup will be fantastic as a topping for vanilla ice cream.
Whisky – Barrel-aged maple syrup in used whisky barrels. A fine smoky note that complements the sweet maple syrup and gives it an exciting character. Use it for cocktails, e.g. an Old Fashioned.

Escuminac was founded in 1998 by Martin Malenfant.
The century-old maple-covered area of 500 hectares is located in Baie-des-Chaleurs in Gaspésie. In addition to housing many maple trees, the forest also has the finest collection of yellow birch trees in Quebec.
Martin has always wanted to produce a high-quality syrup, while respecting nature. In 2006, he received his organic certification.
