Deep purple wine vinegar made from the Concord grape variety, which grows on the American grapevine Vitis Labrusca.
The grapevine has the nickname Fox grape and is often accused of giving aromas of wet fox tail; fortunately, this is not the case in this vinegar.
Instead, the aroma reveals dark chocolate, marmalade, overripe fruit, and dried cranberry.
The taste is almost wine-like, like a young ruby port with notes of wild strawberries, blackberries, and prunes.
Use
The vinegar is especially good for dishes with duck and darker poultry. Add a little to the sauce and serve with your roasted duck breast.
Use it, for example, for this vinaigrette:
2.5 dl grape juice, reduced to 1/4.
1.5 tsp olive oil
1 tsp Concord 8 vinegar
1 tsp Dijon mustard
A little salt
Or use it in cocktails, preferably in combination with vodka and/or ginger ale.
