Production process β without compromise
At La Secchia Antica Acetaia, balsamic vinegar is made exclusively from grape must. The maturation takes place in small oak barrels and follows traditional methods.
Unlike many industrially produced variants, no caramel, colourings, flavourings or acacia gum are added to adjust consistency or taste. Righi Lorenzo maintains an uncompromising approach to authenticity β a balsamic from here is a pure product without additives.

Aceto Balsamico di Modena IGP β Blended cuvΓ©es
The IGP designation (Indicazione Geografica Protetta) refers to a protected geographical indication, which requires that the product is produced in Modena or Reggio Emilia.
This type of balsamic is made as a cuvΓ©e, meaning that several vintages are blended β similar to the solera system used in sherry. The oldest balsamic adds depth and complexity, while the younger vintages bring freshness and structure.
Aceto Balsamico Tradizionale di Modena DOP β Single vintage, long ageing
DOP balsamic (Denominazione di Origine Protetta) is the most prestigious category. Only a single vintage is used, which is aged for a minimum of 12 years β often much longer.
The bottle used for DOP balsamic is mandatory: 100 ml in the characteristic design created in 1988 by Giorgetto Giugiaro (Italdesign). Only the consortium in Modena may use this bottle and also certifies each individual product before it is released.
