Linden Leaf – When science and taste meet in molecular perfection

Behind Linden Leaf are three scientists and engineers from Cambridge – Paul, Mukund and Matthew – united by their passion for good food and drink. What started as conversations over a gin and tonic about molecular gastronomy and sensory science quickly became a groundbreaking project: to create sustainable spirits with extreme precision in taste and aroma.

Taste science as a foundation

The trio approached it scientifically: They studied extraction methods, molecular structures and the countless ways in which taste and aroma manifest in nature’s raw materials. With a background in analytical chemistry and great curiosity, they began mapping ingredients – herbs, spices, fruits and vegetables – down to the molecular level.

It all started on a small scale, with their own sensory tests. But soon they involved friends and test subjects in larger tasting panels. The results were surprising: how many unexpected ingredients had orange notes, and how coriander tastes like soap to some. It became clear that taste is both scientific and subjective – and therefore worth understanding in depth.
