Château de Cayx Cahors Malbec 2014
Château de Cayx is located in Cahors in southwestern France and is owned by the Danish royal family. The estate produces classic wines based on Malbec, the regionâs traditional grape variety.
This Cahors Malbec 2014 is positioned just above the estateâs entry-level wine and is made exclusively from 100% Malbec.
The grapes come from a plot of about 7 hectares, where the vines are on average around 35 years old. To ensure quality, green harvesting is carried out in the vineyard to limit yields and increase concentration in the grapes.
Vinification
The harvest is carried out mechanically, after which the grapes are destemmed and undergo an additional manual selection on a sorting table in the cellar.
After harvest, the must undergoes a cold pre-maceration at 8°C for three days before fermentation begins. Alcoholic fermentation and maceration then take place in stainless steel tanks for about 28 days at 26â28°C, followed by a short soak at higher temperatures.
The wine is then aged for 12 months in oak barrels, about a third of which are new.
