Akasu vinegar – 5 years – 900ml

64,00

In stock

Akasu is a traditional Japanese red vinegar made from sake lees. In Japanese, aka means red and su means vinegar.

When the sake lees are aged and ferment over a long period, the color changes from light amber to brownish red. During the process, proteins are converted into amino acids, and starch is slowly converted into sugar and organic acids. This gives the vinegar a rounder taste than many light rice vinegars.
This Akasu vinegar is aged for 5 years and has a complex flavor with natural acidity, slight sweetness, and distinct umami.
Characteristics
Content: 900 ml
Type: Akasu / Japanese red vinegar
Origin: Japan
Raw material: Sake lees
Aging: 5 years
Taste: Mild acidity, slight sweetness, and umami
Color: Deep amber to reddish-brown
Use
Suitable for sushi rice, dressings, marinades, sauces, pickles, soups, noodle dishes, and salads. Can also be used in dishes where a more rounded vinegar flavor with umami and slight sweetness is desired.
Note

Akasu is produced through a long, natural fermentation of sake lees. After maceration, the lees are pressed, after which the vinegar continues to age before release.
