These anchovy fillets come from the Cantabrian Sea in northern Spain and are caught exclusively during the short spring season from March 1 to June 30. It is precisely here that the fish achieves the perfect balance between flesh and fat content, resulting in a clean and intense flavor.
The fish belongs to the species Engraulis encrasicolus and measures about 15 cm. Each anchovy is hand-processed: the head and innards are removed manually, after which the fish is salted and matured over time. This traditional process gives the fillets their distinctive umami and silky-smooth texture.
Here they are further seasoned with garlic and chili, adding warmth and depth without overpowering the fish’s fine balance. Packed in olive oil, ready to use in many dishes.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
