Inaniwa udon – Japanese handmade noodles from Akita

Inaniwa udon is one of Japan’s most renowned types of udon and originates from the Inaniwa district in Akita Prefecture. The recipe has been preserved since 1665 and represents the finest of Japanese noodle craftsmanship.
The noodles are made from Japanese wheat and spring water from Mount Kurikoma, and the traditional process involves hand-kneading, stretching, and resting time. This creates small air pockets in the dough, giving the noodles their elastic texture and silky-smooth mouthfeel. Inaniwa udon is thinner, smoother, and more refined than regular udon noodles.
Use:
  • Boil the noodles in plenty of water for about 3 minutes.
  • Drain and briefly rinse under cold water.
  • Serve them cold with soy sauce, dashi, or ponzu – or hot in a classic Japanese broth based on soy, dashi, or miso.
Characteristics:
  • Handmade following a tradition from the 1600s
  • Made with pure spring water and Japanese wheat
  • Thin, elastic, and smooth texture
  • Suitable for both hot and cold servings

An authentic Japanese specialty that combines craftsmanship, history, and delicate flavor – perfect for both professional kitchens and food enthusiasts who want the very best of Japanese noodle tradition.
