Kinsho Akasu is a Japanese red vinegar made with sake lees as the main ingredient. Akasu means red vinegar in Japanese and differs from regular rice vinegar, which is typically made directly from rice.

When the sake lees are aged sealed for a longer period, the color changes from amber to brownish red. This happens through the influence of yeast and koji culture.
During aging, proteins are converted into amino acids, while the starch is slowly converted into sugar and organic acid. This gives the vinegar a rich taste, mild aroma, and distinct umami.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
