The Kobe region in Japan is known for its intense, wonderful, and unique flavor, as well as its tender texture with intense marbling.

All cattle in the KOBE prefecture are raised according to strict guidelines that allow them to live stress-free lives. This results in cattle that are healthy and happy, which in turn produces meat that is more tender and has a better flavor. In addition, the cattle in Kagoshima are fed locally grown crops and grass, which further contributes to the unique flavor of KOBE wagyu. The KOBE region has very strict requirements for the wagyu cattle that are used, and therefore you are always guaranteed high quality.
BMS stands for Beef Marbling Standard, and is a grading scale used to define the meat’s fat marbling. The highest score is BMS 12, which is awarded for the highest marbling, and BMS 1 is given for the lowest marbling.
KOBE Wagyu:

Comes from Kuroge cattle – within this there are three bloodlines – Tajima, Fujiyoshi, and Kedaka. Kobe comes ONLY from the Tajima bloodline.
Kobe must come from Hyogo Prefecture in Japan.
Kobe must have a yield score of A or B (this refers to how high a percentage of meat there is relative to body weight).
The Japanese Meat Grading Association must give the meat a score of 4 or 5 (the score is given based on the fat’s color, the meat’s color, and marbling).
Kobe must also have a marbling score of 6 or higher (the scale ranges from 3 to 12 and is based on the cattle’s rib-eye).

Kobe gives you a balanced experience, with meat that combines the flavor and texture of red meat with tenderness from the marbling.

Delivery of chilled goods:

All chilled goods are shipped securely in insulated boxes with plenty of ice packs, so your package stays cold during transport. We guarantee that the package remains cold for up to 12 hours after arrival at the selected parcel shop. Please make sure to collect your package promptly. If the package is collected later than 12 hours after arrival, the right to make a complaint is void.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
