This black vinegar is made from Japanese brown rice using traditional methods, using the clear water and pure air of the Gifu region.
It is very aromatic and slightly sweet.
It has sweetness and umami from the rice as well as a mild and fruity acidity. There are also some toasted notes and a slight bitterness at the end.
It will be delicious on grilled fish, together with gyoza, to add roundness to sautéed vegetables.
This vinegar is ideal for making other sauces: with a little water and honey for a balanced and spicy sauce / with sansho for a marinade.
Don’t be afraid to try it in drinks: in tea or as an infusion with honey and ginger.
