Sansho pepper. Produced in Japan, where it is harvested south of Kobe in Wakayama Prefecture on Honshu Island.
The aroma has a piquant menthol note along with delicate notes of lemongrass, mandarin, and nutmeg.
The flavor is explosive with lots of lemon, mint, and lemongrass. Like its cousin, Szechuan pepper, it lightly numbs the palate.
Harvested from July–August. The berries are picked before ripeness and dried, after which the berry itself, which is as hard as wood, is removed to preserve only the fruit husk. The husk is the most aromatic part of the Sansho berry, and it constitutes the “cold” spice, meaning a spice that is both spicy and refreshing.
