Slow brewing. Long-lasting flavour.

At Tajima Brewery, the vinegar is brewed using the classic “static fermentation method” – a still fermentation process where the vinegar is allowed to develop over up to 3.5 years. It all begins with sakekasu – the by-product of sake production – which is carefully transformed into vinegar in specially built fermentation rooms lined with cedar wood.

The fermentation takes place under controlled temperature and with great care, allowing the natural amino acids to develop umami, clarity, aroma and depth.

The result is a range of vinegars with true character.

Tajima Brewery is more than a brewery – it is an active part of the local community. In addition to collaborating with farmers on the cultivation of yuzu, sansho pepper and rice, the company also hosts annual food competitions and works to revitalise the use of fields and local resources.

The vinegar is not suited for mass production – and that is precisely the point. This is about honest fermentation, local roots and carrying something authentic forward.
