Akasu vinegar – a Japanese delicacy that takes your dishes to new heights!

• Perfect for dressings, sauces, marinades, pickles, soups, noodle dishes, and salads.
• Made from the finest sake lees and fermented for 3 years for a deep, complex flavor.

• Beautiful red and deep amber color that adds elegance to any dish.
Aka means red and su means vinegar, so this vinegar is a red vinegar (red vinegar).

Akasu vinegar is a type of vinegar made by fermenting sake leftovers. It is a traditional Japanese vinegar with a unique taste and aroma. When the sake lees are kept sealed for a long time, their color changes from amber to brown due to the influence of yeast and koji.
Akasu vinegar has a deep amber color and a complex flavor. It has a natural acidity and a slight sweetness that comes from the fermentation of sake leftovers. Akasu vinegar also has a delicate fragrance that can vary depending on the production method and fermentation time.
Akasu vinegar is used in Japanese cooking to add acidity and flavor to various dishes. It can be used in dressings, sauces, marinades, and pickles. Akasu vinegar is also popular as a flavor enhancer in soups, noodle dishes, and salads. It can also be diluted with water and enjoyed as a refreshing drink.

The production takes a long time, as the process is very intricate, though natural. The lees become softer and softer, proteins are converted into amino acids, the starch is slowly converted into sugar and organic acid. For the production of the red Akasu vinegar, the best sake lees are selected; these ferment naturally for at least 3 years. After this long maceration, the lees are pressed and the vinegar is left for a further 3 months.
