Dried chanterelles – Cantharellus cibarius

The chanterelle is one of the most popular edible mushrooms and is valued for its firm texture and distinctive flavor. When the mushroom is fresh, it has an egg-yolk yellow to pale yellow color, which becomes more brownish when dried.
Young chanterelles have a convex cap that develops into a funnel shape with age. The characteristic ridges resemble gills but are thicker and run down the stem, which is often short and slightly curved at the bottom. The flesh is dense and firm, making the chanterelle suitable for many preparations.
The flavor is lightly spiced, deep, and unique—an attribute that makes chanterelles a classic in both Nordic and French cuisine.
Preparation
The dried chanterelles should be covered with boiling water and left to soak for about 15 minutes before use. The soaking water can advantageously be used as a flavoring stock in soups and sauces.
Properties
  • Dried chanterelles (Cantharellus cibarius)
  • Firm flesh and a lightly spiced flavor profile
  • Egg-yolk yellow when fresh, brownish when dried
  • Ideal for sauces, soups, risotto, and stews
