BMS stands for Beef Marbling Standard and is a grading scale that defines the meat’s fat marbling. The highest score is BMS 12, which is awarded for the highest fat marbling, and BMS 1 is given for the lowest fat marbling.

Genetics are also measured in Wagyu cattle. Cattle for this cut are Crossbred Wagyu F1, which indicates that the genetic Wagyu content is higher than 50%. This means the meat comes from offspring from crossbreeding of at least 3 generations between a fullblood Wagyu bull and a female of another breed.
When the meat is assessed, it is evaluated based on a number of parameters such as the color of the fat, marbling, the meat’s firmness and texture. The cattle yield is also part of the assessment – and here grades A, B or C are given depending on how large the yield is; for example, if the yield is higher than 72%, an A grade is given.  After that, the other assessments are added together on a scale, and it is evaluated whether the grade is 1, 2, 3, 4 or 5 – where 5 is the highest rating.
Flapmeat, also known as bavette, is an American cut. It is approx. 2.5 cm thick. Flapmeat sits above the flank and down toward the belly. It has a coarse texture and is a bit reminiscent of hanger steak, and is incredibly tender.
Important when ordering multiple pieces (variable weight)

When you order multiple pieces of a product with a stated weight range, the order is packed according to the total ordered weight – not necessarily in equal pieces.
Example: If you order 2 pcs. of 1000–1100 g (approx. 2200 g in total), you may receive, for example, one piece of 800 g and one of 1400 g, as long as the total weight corresponds to what was ordered.
If you specifically want the pieces to be within the stated range per piece (e.g., 2 pcs. of 1000–1100 g each), please write this clearly in the comment field at checkout. Then we will try to accommodate the request as precisely as possible

If you place your order before 12:00 noon, Monday–Thursday, we will dispatch your order the same day.

Delivery of chilled goods:

All chilled goods are shipped securely in insulated boxes with plenty of ice packs, so your package stays cold during transport. We guarantee that the package remains cold for up to 12 hours after arrival at the selected parcel shop. Please make sure to collect your package promptly. If the package is collected later than 12 hours after arrival, the right to make a complaint is void.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
