Japanese Somen Noodles

Shimabara Tenobe Somen is produced in Nagasaki Prefecture by a long-established cooperative that brings together several producers from the Shimabara region. Since the 17th century, the area has been known throughout Japan for its artisanal production of somen—ultra-fine, white wheat flour noodles characterized by their smooth texture and short cooking time.
The Shimabara Tenobe Somen cooperative, founded in 1978, was created to preserve and promote the local craft, in which the noodles are still stretched and dried by hand. This traditional process gives a special elasticity and a clean, delicate flavor, making the noodles suitable for both cold and hot servings.
Use and preparation:
  • Preparation: Boil the noodles in plenty of water for 1½–2 minutes. Then immediately rinse in cold water to stop the cooking.
Serving:
  • Cold with mentsuyu sauce and fresh vegetables
  • Hot in miso soup or light broths
  • Somen is often enjoyed cold in the summer months, served in a mild, chilled soup with dashi and soy sauce—a classic dish that highlights the noodles’ fine texture and subtle wheat flavor.

Delivery of chilled goods:

All chilled goods are shipped securely in insulated boxes with plenty of ice packs, so your package stays cold during transport. We guarantee that the package remains cold for up to 12 hours after arrival at the selected parcel shop. Please make sure to collect your package promptly. If the package is collected later than 12 hours after arrival, the right to make a complaint is void.

Shipping of frozen goods to private customers:

All frozen goods shipped to private customers are sent to thaw in the insulated box. Please order your items according to when you need them. You can always choose your preferred delivery date at checkout.

If you do NOT wish to receive your frozen goods thawed, you can purchase frozen shipping here. Please note that we only guarantee that your goods remain frozen for up to 12 hours after delivery to the parcel shop. Therefore, make sure to collect your package promptly.
