About the author
Anaïs Ca Dao van Manen is a chef and consultant with experience from kitchens in both Europe and Asia. She was born in Paris to a Vietnamese-Dutch family and has worked at restaurants such as Auberge de Chassignoles, Café Bar Universal, Trullo, and Bao in London.
Background and experience:

  • Has worked in development and consulting within gastronomy
  • Has opened her own restaurants in Vietnam
  • Communicates Vietnamese food culture through cookbooks and social media
